Today I have a delicious new brownie recipe for you! A fudgey, chewy, rich brownie with a kick! The perfect after dinner treat with that After eight hit. So delicious and so easy to put together!

I’m not generally a dark chocolate fan. I use it in a lot of bakes but I wouldn’t be big into eating it alone.

Dark chocolate with mint though is perfect. The bitter chocolate and the sweet minty filling of a thin mint work really well together and After Eight Brownies are pretty much perfect.

  • 100g Gluten Free plain Flour
  • 30g cocoa powder
  • 170g butter
  • 125g dark chocolate
  • 2 eggs
  • ½tsp mint extract
  • 100g light brown sugar
  • 150g cups granulated sugar
  • 1 pack of After Eights
Instructions
  1. Preheat your oven to 160C Fan/180C/Gas 4 and prepare a 9x9'' square tin with non-stick baking paper.
  2. Melt together your butter and chocolate in a microwave until completely melted.
  3. Sieve together your cocoa powder and gluten free flour in a bowl. Mix until combined, then put to one side.
  4. In another bowl add your eggs, mint extract and pour in your sugars. Beat together until combined.
  5. Next fold in the your flour and cocoa powder mix. Ensure it's fully folded in.
  6. Once the chocolate and butter mixture is cooled to room temp, pour it into your mixture. Fold until combined.
  7. Pour half of your brownie batter into your prepared tin.
  8. Lay your After Eights over your brownie batter then pour over the remaining brownie batter.
  9. Bake for about 25 mins. Your brownies will still wobble a little as they set more as they cool.
  10. When completely cooled cut into squares.
  11. melt some white chocolate with a drop of green food colouring and drizzle over your brownies then top each slice with another After Eight.
