Little Gluten Free Sausages wrapped in Bacon, with the addition of a little honey and mustard to make them sticky and even more delicious!
Pigs in a blanket make the best accompaniment to that Christmas turkey, you know we all fight over these tasty little sausages!

If you are reading this from the USA and you are wondering why my pigs in blankets look nothing like the one you know, well, this is the British/Irish pigs in a blanket recipe.

It is a cocktail pork sausage wrapped with streaky bacon which is different from the USA version that is wrapped with a pastry. Mostly cooked cocktail hot dogs wrapped in crescent or puff pastry dough are served as pigs in a blanket in the USA.

Use Gluten Free cocktail sausages. I got mine in M&S.

Use Streaky bacon, I used smoked streaky bacon for additional flavour but you can use an unsmoked one if you prefer.

Honey and mustard: I added Honey and mustard for additional flavour. Just brush this on using a pastry brush once they come out of the oven. Always make sure your mustard is gluten free. I used French’s English Mustard, this has no gluten containing ingredients.

Ingredients
  • 24 gluten free cocktail sausages
  • 12 slices smoked streaky bacon
  • 2 tbsps honey
  • 1 tsp yellow mustard
Instructions
  1. Preheat the oven to 200C Fan/400F and line a baking sheet.
  2. To a small bowl, combine honey and mustard, stir to combine, and set aside.
  3. Place the streaky bacon on a chopping board and cut them into two halves.
  4. Wrap bacon around each cocktail sausage and place them seam side down on the baking tray. Repeat the process until you have all the sausages wrapped in a slice of bacon.
  5. Place in the oven and cook for 20 minutes, remove from the oven and brush the honey mustard sauce all over bacon-wrapped sausages.
  6. Transfer the pigs in blankets onto a serving dish. Enjoy
