Today i decided to make a apple cake but i wanted it to be more exciting so i thought i would make an apple upside down cake so i have thrown loads of apples in the cake batter.
I also put cinnamon into it to get that yum apple sugar cinnamon taste. Add pears with the apple if you wish or maybe throw in some sultanas for variety.
Serve this hot or cold with custard or fresh cream.

Ingredients
- 8oz/225g Gluten free self raising flour
- 3oz/85g Margarine
- 5oz/125g Sugar
- 1tsp Ground Cinnamon
- 2 Cooking apples
- 2 eggs, beaten
- a little milk
- For the Glaze:
- 3oz/75g Butter
- 2oz/50g Light Muscovado Sugar
- 2oz/50g Caster sugar
- Half a cooking apple
Instructions
- You need to start by preparing your sandwich tin with the glaze.
- To do this mix the butter with the sugars in a bowl until fluffy.
- Peel and chop half a cooking apple into bite size pieces.
- Put the butter and sugar mix onto the bottom of the tin, as thick as you want. This will create a syrup on the cake when cooked.
- Place the chopped apples over the sugar and butter. Leave to the side while you make your cake.
- Now Preheat your oven to 180*C/350*F/Gas 4
- Sieve flour and cinnamon into a bowl.
- Rub in margarine with your fingers until the mixture looks like breadcrumbs.
- Peel and Chop the apples and add to the flour mix.
- Add the sugar and mix well.
- Add the beaten eggs.
- If the mixture is too dry add a little milk to make a smooth glossy mix but not too thick.
- Put the mixture in the sandwich tin over the sugar mix and apples.
- Sprinkle the top with sugar.
- Bake for approx 40 minute until golden brown.
- Toss the cake onto a plate. It should slide out no problem.
