There’s nothing surprisingly new about these. it’s simply ham and cheese wrapped up in a flaky gluten free puff pastry.

The beauty of this recipe is in the simplicity. Just 3 ingredients, yes people! Just 3. A package of gluten free puff pastry (I used Galberts) I found mine in the fridge section in Dunnes Stores, then just cheese, and ham.

I use a mix of grated red cheddar and mozzarella, but you can use any cheese you prefer here. For the ham I just buy a pack of good quality slices and cut them into small squares.

For for the pastry I prefer 6 squares per sheet. Be generous when you fill them, especially with the cheese. That dough is going to puff up and increase and you want to have a nice creamy center to bite into.

Then you’ll just fold in the edges like this. Then give them a quick brush of egg wash before they go into the oven.

When they puff up in the oven, the tops will come apart, and that’s okay! That’s actually what’s supposed to happen. You want them puffed and golden brown.
