Fresh strawberries shine in this Gluten Free Strawberry Cobbler. Made with just five ingredients, this easy delicious cobbler comes together in a flash!
Cobblers are the best desserts ever. That golden, crisp top layer, the fluffy underside and then that sweet, gooey fruit. You gotta love the fact that they are so easy to throw together. I usually always have the ingredients on hand to whip up a cobbler for dessert. Coupled with a scoop of vanilla ice cream or fresh whipped cream and everyone is happy.
For strawberry cobbler it’s best to leave the berries whole, or halved if they are very large.
If you’re using small strawberries for your cobbler, just cut away the stem and then cut them in half. Strawberries break down quickly when baked so you want to have some texture in the cobbler. Don’t worry about having enough strawberry juice swimming around under the topping, you’ll have plenty. If you have giant strawberries, feel free to cut them in thirds.
Serve your strawberry cobbler hot, warm or at room temperature.
It’s hard to resist hot cobbler straight from the oven, especially when topped with vanilla ice cream. If you want the sauce to thicken up a bit, allow the cobbler to rest about 30 minutes before serving, It will still be warm but won’t burn the roof of your mouth.
- 500g fresh strawberries
- 3tbsp granulated sugar
- 2tbsp butter softened
- 1 cup gluten free self-rising flour
- ¾ cup granulated sugar
- 1 cup milk
- Preheat oven to 350F/180C/Gas 4.
- Clean strawberries and slice into thick slices.
- Place sliced strawberries in a 9x9-inch baking dish coated with non-stick cooking spray.
- Place sliced strawberries with the 3 tablespoons of granulated sugar, toss to coat with the sugar, and dot the berries with small pieces of the softened butter.
- In a bowl, mix the gluten free self-rising flour, ¾ cups of granulated sugar, and milk with a hand held electric mixer until just combined. Pour batter over the strawberries.
- Bake for 1 hour until lightly golden browned and the berries are bubbly.
- Serve with vanilla ice cream, whipped cream or even some custard.
This looks delicious. How do I make gluten free self rising flour. I don’t have any of that. I can’t buy it around here.
Hi Cathy. I have heard from others that its not available in the US. So for this recipe just use plain gluten free flour then add 1/2tsp of baking powder before blending it up.
