Gluten-Free Slow Cooker Beef & Peppers
This Gluten-Free Slow Cooker Beef & Peppers is one of those dreamy dump-and-go meals that’s packed with flavour, super comforting, and so easy to throw together. It’s tender, savoury, and inspired by Chinese-style takeaway dishes but made coeliac-safe and cooked low and slow for maximum flavour.

Once you try this, it’ll become one of those weeknight favourites you go back to again and again. The beef turns out incredibly tender thanks to slow cooking, and the sauce is full of rich, savoury goodness. It’s one of those meals that feels like a treat, but is actually so simple to prep.
I love serving it over rice, but it’s also delicious with mashed potatoes, gluten free noodles, or even quinoa. Whatever your family enjoys most this dish works with it. And yes, it tastes just as good as leftovers the next day!

Let’s talk about the peppers, if you love soft, melty bell peppers, just throw them in from the start. But if you prefer a bit more bite and texture, wait and add them in during the last hour of cooking. Just keep in mind, cooking them the full time gives the sauce more flavour.

You don’t need any fancy ingredients or techniques for this one. Just toss it all into the slow cooker, set it, and forget it. Come dinnertime, you’ll have a delicious, warming dish that the whole family can enjoy.
Whether you’re looking for a fakeaway night alternative or a fuss-free family dinner, this Gluten-Free Beef & Peppers ticks all the boxes: easy, flavourful, budget-friendly, and coeliac-friendly.

Notes
Slow cooking makes the beef extra tender — much more than stove-top cooking.
Add peppers at the beginning for soft, flavour-infused peppers, or in the last hour for a crisper texture.
Serve over white rice, brown rice, mashed potatoes, gluten free noodles, quinoa, or steamed veggies — whatever suits your family!
For extra flavour, sear the beef first before adding to the slow cooker (optional).
Leftovers store well in the fridge for up to 3 days, or can be frozen and reheated for an easy dinner later.
Add a pinch of chilli flakes or a splash of gluten free soy sauce to boost flavour if desired.
