A Simple Bake That Never Fails
This is one of my older recipes, from back when I was really just finding my feet in the kitchen. I was always drawn to recipes that didn’t require loads of ingredients or complicated steps, and this one ticked every box. It’s basically a blonde brownie (or blondie!) taken up a level with crunchy peanut butter and melty chocolate chips.
Even now, I still come back to this recipe when I want something quick, easy, and guaranteed to turn out well. It’s one of those bakes you can throw together in minutes, but it tastes like you’ve put in far more effort.

Peanut Butter + Chocolate = Always a Win
There’s just something about peanut butter and chocolate that works every single time. The rich, slightly salty peanut butter pairs perfectly with the sweetness of the chocolate chips, creating that classic flavour combination that’s hard to beat.
I used crunchy peanut butter in this recipe for a little extra texture, but smooth works just as well if that’s what you have on hand. And just like with most of my recipes, you don’t need anything fancy, use whatever brand you like.

Soft, Chewy and Loaded with Chocolate
These blondies bake up with golden edges and a soft, chewy centre. The top gets slightly crisp, while the inside stays rich and gooey, exactly how a blondie should be.
I always like to save a handful of chocolate chips to sprinkle over the top before baking. Not only does it make them look even more tempting, but you also get those little pools of melted chocolate on top once they come out of the oven.

This is definitely one of those recipes that you’ll find yourself making again and again. It’s quick, it’s reliable, and it always goes down well with everyone who tries it.

Gluten-Free Peanut Butter Chocolate Chip Blondies
These gluten-free peanut butter chocolate chip blondies are soft, chewy and packed with flavour. An easy one-bowl bake perfect for any occasion.
Ingredients
Instructions

Mix the butter, peanut butter and sugar together.

Add the egg and vanilla and mix well.

Add the salt and flour and mix until all is combined.

Fold in Chocolate chips but leave a few for sprinkling.

Press mixture into a 9×9 square pan lined with parchment paper.

Sprinkle the rest of the chocolate chips over the top.

Bake at 180*C for 20 minutes, until top and edges are brown.

Let cool, then cut into squares.
Notes
You can use smooth or crunchy peanut butter Don’t overbake — they will firm up as they cool
Add white chocolate chips for a twist
Store in an airtight container for up to 4 days
