Gluten-Free Curried Sausages

When the weather turns chilly, I start craving hearty, comforting meals and these Gluten-Free Curried Sausages tick all the boxes. They’re cosy, full of flavour, quick to make, and best of all, they’re a hit with the whole family (yes, even the kids!).

This is the kind of dinner that feels like a hug in a bowl. It’s warm, mildly spiced, and made in just one pan, which makes life so much easier on busy evenings. The creamy curry sauce is packed with veggies, juicy sausages, and just enough spice to keep things interesting without being too hot. Perfect for the little ones.

What I love most about this recipe is how budget-friendly and adaptable it is. You can use your favourite gluten free sausages, pork, chicken, even veggie ones and load it up with whatever vegetables you have to hand. I usually go with carrots and frozen peas, but feel free to mix it up!

The curry powder brings the whole dish together, and each brand will give it its own twist. Just make sure yours is gluten free, most are, but it’s always worth checking the label. And to thicken the sauce, I use a little gluten free flour, though cornflour works just as well if that’s what you’ve got.

It comes together in under 30 minutes, but if you’re in the mood for something even more hands-off, you can pop everything into the slow cooker (I’ve included instructions for that too! Just check the notes in the Recipe Card Below). Either way, it’s one of those recipes you’ll want to come back to week after week.

We love ours served with buttery mashed potatoes, but it’s just as tasty over rice or chips. It’s one of those easy, go-to dinners that’s both coeliac-safe and kid-approved — and I’m all about that!

Gluten-Free Curried Sausages

These gluten-free curried sausages are the perfect family comfort food, one pan, full of flavour, and ready in under 30 minutes.

Ingredients

Instructions

  1. Heat some oil in a large pan over medium high heat.
  2. Cook sausages, turning to brown all over then remove from the pan.
  3. In the same skillet, add garlic and onion. Cook for 2 minutes until soft.
  4. Add curry powder and stir for 30 seconds.
  5. Add flour and mix for 30 seconds.
  6. Gradually pour in chicken stock, mixing constantly.
  7. Add carrots, sugar, salt and pepper, stir well.
  8. Slice the sausages.
  9. Add sausages and peas, bring to simmer and cook for 3 minutes or until sauce thickens.

Notes

Use your favourite gluten free sausages — pork, chicken, or even vegetarian.

Brown the sausages first for extra flavour and better texture.

I like adding carrots and frozen peas, but you can mix in whatever veg you have on hand.

Make sure your curry powder is gluten free — each brand tastes a little different.

To thicken the sauce, use gluten free flour or substitute with cornflour.

For a slow cooker version: brown sausages first, then cook everything (except peas) on low for 6 hours or high for 3 hours, adding peas in the last hour.

Serve with mash, rice, or chips for a warming, easy dinner the whole family will love.
