This Gluten Free BBQ Chicken Grilled Cheese Sandwich is amazing! Garlicky buttered crispy golden bread on the outside, gooey oozing mozzarella cheese and BBQ chicken on the inside, open your mouth wide and take it all in!
As grilled cheese recipes go, this is definitely one of the more simple ones. It requires few ingredients and it’s perfect to use up left over roast chicken from your Sunday roast!
For the BBQ chicken you’ll want to use cooked chicken. Whether that’s buying a cooked rotisserie chicken, using up leftover chicken you’ve got on hand or cooking up some chicken breasts specifically for this sandwich.
WHAT BBQ SAUCE TO USE?
You can really use any you like best.. Just make sure it’s a quality brand as it does NOT contain any gluten ingredients to keep this sandwich gluten free. I used Bulls Eye BBQ Sauce.
WHAT BREAD TO USE?
Obviously any gluten free bread should work. Use your favourite. I always use Promise. It really is the best gluten free bread about in my opinion.
A good Gluten Free grilled cheese is basically my new favourite, and I’ve not met a grilled cheese I don’t like yet. From savory to sweet, it is a very versatile sandwich. I will defiantly be sharing tons of recipes with you in the future.
- 4 slices of gluten free bread
- ½ cup of grated mozzarella cheese
- 2 tbsp garlic butter
- 1 cup cooked chicken, shredded
- ¼ cup BBQ sauce
- Spread ½ tbsp of butter on one side of each bread slice.
- In a bowl, mix the shredded chicken and BBQ sauce.
- Put a bread slice on a plate buttered side down, spread a half of the BBQ chicken mixture on top of the bread, then put ¼ cup of cheese on top, and top with another slice of bread (buttered side UP). Basically, the buttered sides have to be on the outside of the sandwich (the butter should come in contact with the frying pan). Repeat to assemble a total of 2 sandwiches.
- Preheat a frying pan over medium heat.
- Add the grilled cheese sandwiches to the frying pan. Cook for 3 minutes on one side (or until that side is golden brown), then carefully flip the grilled cheese over and cook for 3 minutes on another side until golden brown.
- Served the grilled cheese immediately while it's hot and crispy! Enjoy
