Its funny that here in Ireland we actually do not call it a zucchini. We call it a courgette, but courgette cheese bread just does not sound as fun.

I love zucchini AKA courgette,  but to me, CHEESE will always be #1 in my heart! So, I came up with this Gluten Free Zucchini Cheese Bread recipe that has a subtle zucchini flavour, but LOTS of cheesy goodness. I also love this recipe because you don’t need to squeeze out the moisture in the zucchini beforehand. So, it’s pretty easy to make too!

Delicious on its own, but even better when topped with cream cheese or butter

What should I serve this with?
Serve this bread with chive cream cheese! Seriously, it takes it to the next level. Don’t have chive cream cheese? Use regular cream cheese and sprinkle some chives on top. Alternatively, you can top it with butter.

Serves: 1 loaf
Ingredients
  • 1½ cups zucchini, shredded (do not squeeze)
  • ¼ cup green onion, sliced (optional)
  • 2 large eggs
  • ¾ cup sour cream
  • ¼ cup butter, melted and cooled
  • 1½ cup cheddar cheese, grated
  • 2 cups gluten free self raising flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
Instructions
  1. Mix the zucchini, green onions, eggs, sour cream, and butter well before mixing in the cheese.
  2. Fold in the flour, baking powder, baking soda and salt.
  3. Pour the batter into a greased 9×5 inch loaf pan.
  4. Bake in a preheated 350F/180C oven until a toothpick pushed into the center comes out clean, about 1 hour.
  5. Let cool a bit before running a knife around the inside edge of the pan, removing the loaf.
  6. When cooled slice and top with cream cheese.
