I’ve seen these peanut butter stuffed dates coated in dark chocolate all over Pinterest lately, and I finally gave in to the trend, and wow, they’re absolutely worth the hype. This recipe isn’t mine originally, but it’s one of those viral ones that you just have to try. They’re easy, quick, naturally gluten-free, and honestly taste just like a homemade Snickers bar.

The first bite was enough to convince me. That rich, chewy date with creamy peanut butter and a thick layer of dark chocolate is just perfection. They hit all the right notes – sweet, salty, crunchy, and smooth. I used smooth peanut butter this time around, mostly because I’ve got little ones who still find crunchy bits a bit much. But if you don’t have that problem, definitely go for crunchy peanut butter! It adds such a lovely bite and makes them feel even more like a Snickers. You could even press a few chopped peanuts into the filling before dipping to really amp up the crunch.

Gluten-Free Dark Chocolate & Peanut Butter Stuffed Dates

Carefully slice each date lengthways and remove the pit if not already pitted. Be careful not to cut all the way through as you want them to open like a book.

Using a teaspoon (or piping bag for less mess), fill each date with around ½ tablespoon of peanut butter. Gently press them closed.

Break the dark chocolate into pieces and melt it in a heatproof bowl over a pot of simmering water (or in the microwave in 30-second bursts). Stir in the coconut oil if using.

Using a fork or dipping tool, coat each stuffed date fully in the melted chocolate. Tap off excess chocolate and place on a baking sheet lined with parchment paper.

Before the chocolate sets, sprinkle over your chosen toppings.

Place the tray in the fridge for at least 20 minutes or until fully set. Enjoy straight from the fridge or at room temperature.
