I am definitely one of those people that is happy to eat soup all year long, but when autumn and winter roll around, I really like to amp it up. Soup, all day every day. Is there anything more warming, filling, and comforting than a hot bowl of soup?

For this recipe, the goal is delicious, quick and easy chicken and dumplings. We are not looking to spend a lot of time. In fact, I just have 30 minutes to get it made! So with that in mind, I use already cooked chicken in this recipe. You can make your own shredded chicken or you can purchase a pre-cooked chicken, both will work great.

  • 2 tbsp butter
  • 2 carrots, sliced
  • 1 onion diced
  • ¼ cup gluten free flour
  • 4 cups chicken stock
  • ½ cup whole milk
  • 2 cups cooked diced or shredded chicken
  • extra salt and pepper
  • FOR THE DUMPLINGS
  • 2 tbsp butter
  • 1 cup gluten free flour
  • 1 tsp kosher salt
  • 1 tsp baking powder
  • ½ cup whole milk
  • 1 tsp fresh thyme leaves or ½ tsp of dried
Instructions
  1. Saute the carrots, and onions in the butter in a large pot over medium high heat until browned and soft, approx 3 minutes.
  2. Add flour, stir to coat.
  3. Add chicken stock and bring to a boil.
  4. Turn the heat down to simmer and add the milk and the chicken. Season with salt and pepper.
  5. To make the dumplings, mix together the 1 cup of flour, 1 teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon Thyme.
  6. Stir in the 2 tablespoons of butter, melted, until the mixture is crumbly. Add the ½ cup of milk and stir until just until combined.
  7. Add spoonfuls of the dumpling mixture to the simmering pot.
  8. Cover and simmer on low for 20 minutes, or until dumplings are fluffy, cooked, and float to the top.
  9. Serve garnished with freshly ground pepper,
