I am definitely one of those people that is happy to eat soup all year long, but when autumn and winter roll around, I really like to amp it up. Soup, all day every day. Is there anything more warming, filling, and comforting than a hot bowl of soup?
For this recipe, the goal is delicious, quick and easy chicken and dumplings. We are not looking to spend a lot of time. In fact, I just have 30 minutes to get it made! So with that in mind, I use already cooked chicken in this recipe. You can make your own shredded chicken or you can purchase a pre-cooked chicken, both will work great.

- 2 tbsp butter
- 2 carrots, sliced
- 1 onion diced
- ¼ cup gluten free flour
- 4 cups chicken stock
- ½ cup whole milk
- 2 cups cooked diced or shredded chicken
- extra salt and pepper
- FOR THE DUMPLINGS
- 2 tbsp butter
- 1 cup gluten free flour
- 1 tsp kosher salt
- 1 tsp baking powder
- ½ cup whole milk
- 1 tsp fresh thyme leaves or ½ tsp of dried
- Saute the carrots, and onions in the butter in a large pot over medium high heat until browned and soft, approx 3 minutes.
- Add flour, stir to coat.
- Add chicken stock and bring to a boil.
- Turn the heat down to simmer and add the milk and the chicken. Season with salt and pepper.
- To make the dumplings, mix together the 1 cup of flour, 1 teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon Thyme.
- Stir in the 2 tablespoons of butter, melted, until the mixture is crumbly. Add the ½ cup of milk and stir until just until combined.
- Add spoonfuls of the dumpling mixture to the simmering pot.
- Cover and simmer on low for 20 minutes, or until dumplings are fluffy, cooked, and float to the top.
