Gluten-Free Turkey, Cranberry & Brie Grilled Cheese
If you’re looking for the ultimate festive toastie, this Gluten-Free Turkey, Cranberry & Brie Grilled Cheese ticks every box. It’s rich, melty, savoury, sweet, and totally comforting — everything you want in a sandwich during the Christmas season.

This recipe is perfect for using up leftover Christmas turkey and cranberry sauce. It’s also a great excuse to treat yourself to a little brie, which melts beautifully and adds that indulgent, creamy layer to each bite. Add some golden, crispy gluten-free bread and you’ve got the kind of lunch that makes cold winter days a lot more bearable.

The flavour combination is pure Christmas magic. The turkey brings that hearty, meaty bite, while the cranberry adds a sharp, fruity sweetness that cuts through the richness of the cheese. And don’t even get me started on the melty brie, it’s the ultimate grilled cheese upgrade.

I always use Promise brand gluten-free bread for sandwiches like this. It grills perfectly in the pan, holds everything together without falling apart, and gets that lovely golden crust when toasted with butter. You’d honestly never know it’s gluten free and neither will anyone else.
If you’re making this after Christmas dinner, this is the best way to enjoy leftovers without feeling like you’re just reheating the same old plate. Pair it with some leftover stuffing or gravy on the side if you fancy it extra festive, or just serve it up on its own with a cuppa.

It’s warm, gooey, festive, and satisfying and once you try it, it might just become your new favourite post-Christmas tradition. Or let’s be honest… you’ll probably start making it before the big day even arrives!

Notes
This recipe is perfect for using up leftover roast turkey and cranberry sauce from Christmas dinner.
Brie cheese melts beautifully and adds a creamy, indulgent flavour — you can also use camembert or even mozzarella in a pinch.
Use Promise brand gluten-free bread or your favourite sturdy gluten-free loaf that toasts well.
Butter the outsides of the bread before grilling for that perfect golden crust.
Add a little leftover stuffing inside the sandwich if you want to make it even more festive.
Serve on its own, or dip into warm leftover gravy for the full Christmas sandwich experience!
Best enjoyed warm straight from the pan, while the cheese is still gooey.
