Gluten-Free Mini Funfetti Yogurt Muffins
There’s just something so comforting about a freshly baked muffin, especially when they’re mini-sized and made with love. These Gluten-Free Mini Funfetti Yogurt Muffins have quickly become a new favourite in our house, they’re soft, fluffy, and packed with colourful sprinkles, (Willow’s Favourite) and just the perfect little bite-sized treat. Whether you need a quick breakfast, a lunchbox filler, or a wee snack with your cuppa, these muffins tick all the boxes.

I’ve been baking with yogurt a lot lately because I love how it keeps everything moist without needing loads of butter or oil. It also gives the muffins a lovely soft crumb that feels almost cake-like but still totally acceptable for breakfast! These mini muffins are super simple, so it’s one I know I’ll keep coming back to over and over again.

Willow stole my muffin
Now here’s the funny part while I was setting up to take photos for this post, Willow decided she couldn’t resist. I always shoot my food photos on a low table right beside our big window where I get the best lighting. Well, that also happens to be the perfect height for a curious three-year-old with a sweet tooth. Next thing I know, she’s snatched a muffin right off the plate mid-shot! I actually caught the moment in one of the photos, and honestly… it’s too cute not to share. She was so proud of herself too with a full-on grin with crumbs on her chin.

It’s little moments like that which make these recipes so much more than just food, they’re memories baked into every bite.. I genuinely can’t keep up with how fast they disappear. These muffins are officially kid-approved and mum-approved!
If you’re a batch baker, this recipe is brilliant. It makes a good few dozen mini muffins depending on your tray size, and they freeze beautifully. Just pop them into a ziplock and take out as needed, they defrost in minutes.

Whether you’re baking these for your toddlers, your teens, or just for yourself (because we all deserve a treat), I know you’ll love them as much as we do. And don’t forget to keep an eye out when little hands are nearby. Willows “Birdy steal my donut” might be old news, but now it’s “Willow steal my muffin!” 😂
