I used my all-time favourite gluten-free bread for this recipe: Promise bread. It toasts up beautifully golden on the outside while staying soft in the middle. It’s strong enough to hold in all that gooey cheese, sautéed mushrooms, and caramelised onions, no soggy sandwich disasters here!

Speaking of gooey, just wait until you slice this one open… that cheese pull is something special. Gouda melts like a dream, creamy, smooth, and a little smoky. It pairs perfectly with the earthy mushrooms and sweet onions. Every bite is warm and comforting, just like the grilled cheese sandwiches you remember, only better.

I actually made this as a non-meat alternative to a steak sandwich, and I promise, you won’t miss the beef. The mushrooms give a rich, “meaty” bite, the onions bring sweetness, and the Gouda does all the heavy lifting in the flavour department. It’s a vegetarian twist that doesn’t feel like a compromise at all.

To take it up a notch, I served mine with a side of pepper sauce for dipping. It might sound a bit extra, but trust me that creamy heat alongside the grilled cheese is absolutely unreal. If you love steak and pepper sauce, this will hit all those same notes, just without the meat.

Gluten-Free Grilled Cheese with Gouda, Mushrooms, and Onions

This rich and cheesy grilled sandwich is a perfect meat-free alternative to a steak sandwich and made completely gluten free using Promise brand bread. With buttery mushrooms, sweet onions, and gooey Gouda cheese, it’s comfort food at its finest. Serve with warm pepper sauce on the side for the ultimate treat!

Instructions

  1. In a medium non-stick frying pan, melt 1 tbsp of butter over medium heat. Add the sliced onions and mushrooms. Season with salt and pepper. Cook for 5–7 minutes, stirring occasionally, until the onions are soft and the mushrooms are golden and tender. Remove from the pan and set aside.
  2. On one slice of gluten-free bread, place 1–2 slices of Gouda cheese. Spoon the cooked onions and mushrooms over the cheese, then top with another slice of Gouda. Finish with the second slice of bread to form your sandwich.
  3. Using the same pan (do not clean it – the leftover butter adds flavour), melt a little more butter over medium heat. Place the sandwich in the pan and cook for 3–4 minutes until the underside is golden brown. Carefully butter the pan again, flip the sandwich, and grill the other side for another 3–4 minutes until crispy and the cheese is fully melted.
  4. Remove from the pan, slice in half, and serve warm with a side of pepper sauce for dipping. Don’t forget to enjoy that glorious cheese pull!

Notes

  • I used Promise brand gluten free bread – sturdy and toasts perfectly.
  • Gouda is ideal for melting and brings a mild smoky flavour, but you can swap it with cheddar or mozzarella if preferred.
  • Caramelise the onions low and slow for the best flavour.
  • For a meatier bite, use chestnut or portobello mushrooms.
  • Serve with pepper sauce or even garlic mayo for dipping – total game changer.
  • This is a brilliant vegetarian alternative to a steak sandwich.
