This recipe is perfect for those days when you’re hungry but don’t want to cook anything complicated. Using just a few simple ingredients, you can have a hot, crispy, cheesy meal ready in minutes. I used gluten-free bread as always, making it completely coeliac-friendly, but you’d never know the difference.

What makes this extra special is the way it’s built. Instead of just making a regular sandwich, I spread pizza sauce on both slices of bread, layered in plenty of mozzarella and chorizo, then topped the outside with even more sauce, cheese, chorizo and oregano before air frying. That top layer goes golden and slightly crispy almost like a mini pizza crust and it takes the whole thing to another level.

Gluten-Free Air Fryer Pizza Toastie
This gluten-free air fryer pizza toastie is quick, cheesy and packed with flavour. Made with mozzarella, chorizo and pizza sauce in minutes.
Ingredients

Spread pizza sauce evenly over both slices of gluten-free bread.

On one slice, add most of the grated mozzarella, followed by the diced chorizo.

Place the second slice of bread on top to form a sandwich.

Now add extra mozzarella and a sprinkle of oregano to the top slice of the sandwich.

Place the toastie carefully into the air fryer basket.

Cook at 180°C for 6–8 minutes, or until the cheese is melted and the top is golden and slightly crispy.

Remove carefully, allow to cool slightly, then slice and serve.
Notes
Keep an eye on it—air fryers can vary, and the top can brown quickly. You can swap chorizo for ham, pepperoni, or keep it vegetarian. Add chilli flakes if you like a little heat. Best eaten fresh while the cheese is still melty.
