Come home to the best homemade Gluten Free Slow Cooker Beef Chili! It’s an amazingly hearty, cozy beef chili that cooks low and slow for 8 hrs or high for 5 hrs in the Slow cooker.
All you need to do is crumble up your ground beef and then dump the rest of your ingredients in your slow cooker.
This Chili is actually one of my favourite meals and I make it all the time. It’s a recipe everyone in the family loves and it’s just good for the soul and is a perfect comfort food.
This slow cooker method is my favourite for chili. The flavour of this chili is rich, the texture of the beef is so tender, and it turns out perfect every time!
And have I mentioned how easy this it is to make? It’s a total breeze, so this will likely become a recipe you won’t want to lose!
My favourite thing about this recipe is turning it into a dump and go bag. Just place all ingredients into a freezer proof zip lock bag. Freeze flat, then just allow to defrost the day before planning on cooking. Then just dump all ingredients into your slow cooker.
Can I Make This Chili on the Stovetop?
If you don’t have a slow cooker this can also be made on the stove top. Brown the beef, onion, garlic and the chili, then add the other ingredients except the beans and corn then simmer 2 – 3 hours over low heat. Then stir in beans and corn until heated through.
What Should I Serve with my Slow Cooker Chili?
Serve your chili as is or top with either, sour cream, avocado, grated cheese, green onions, chives, or crushed tortillas. If you have leftovers I have to mention this chili is great over a baked potato. 😋
- 2 pounds lean ground beef
- 3 cloves garlic, minced
- 1 medium sweet onion, diced
- 1 red chili, minced
- 2½ cups/300ml beef stock
- 1 can red kidney beans, rinsed and drained
- 1 can black beans, rinsed and drained
- ½ cup frozen corn
- 2 cans diced tomatoes
- 3 tablespoons chili powder
- 2 teaspoons smoked paprika
- 2 teaspoons dried oregano
- 1½ teaspoons ground cumin
- salt and freshly ground black pepper, to taste
- TO SERVE
- Sour cream
- Avocado
- Tortilla chips, crushed
- Green onions
- Chives
- Cheese
- Place minced beef into a slow cooker. Stir in beef stock, onion, garlic chilli, kidney beans, black beans, corn, diced tomatoes, chili powder, paprika, oregano and cumin, season with salt and pepper, to taste. Cover and cook on low heat for 7-8 hours or high heat for 5-6 hours.
- Serve immediately, garnished with any of the following toppings - sour cream, avocado, Tortilla chips, green onions, chives, cheese
