These Gluten Free Rocky Road Bars are really simple to make and perfect if you’re a fan of Kinder Bars.
Rocky Road? I simply LOVE it. Chocolate, biscuits, marshmallows and more… literally just heaven. They’re a no-bake recipe so they are super easy to make, and you can put pretty much anything you want into them and make them themed. Hence why this recipe was born!
CAN I SWAP FOR A DARKER CHOCOLATE?
Absolutely! If you’re looking to make your rocky road squares a little less sweet with a deeper cocoa taste, you could swap out the white chocolate for milk chocolate. Although I just love the way white chocolate goes with Kinder Bars.
HOW LONG WILL MY KINDER ROCKY ROAD KEEP?
It will likely be demolished long before you have to worry about it going bad but if you do manage to hold back – Keep it in an airtight container and these tasty treats will last well at room temperature for up to a week, or in the fridge for up to 3 weeks.
CAN I FREEZE MY KINDER ROCKY ROAD?
Yes of course, once sliced up, wrap each individual square in foil and place them in a freezer bag. They can be frozen for up to 3 months. When ready to defrost your rocky road, thaw overnight at room temperature.
- 400g White Chocolate
- 200g Gluten Free Digestive Biscuits, Broken into pieces
- 200g Mini Marshmallows
- 200g Kinder Bars, Broken into pieces
- Line a 9'' by 9'' tray with parchment paper. Leaving bits stick up at the sides so it will be easy to lift out.
- Place the chocolate in a large microwave safe bowl.
- Cook on medium power in 30 second intervals, stirring until melted and smooth.
- Stir in the biscuits, marshmallows and kinder bars. Coating well with the chocolate.
- Spoon into the tray, spreading evenly.
- Chill for 1 hour or until firm.
- Cut into squares and store in a airtight container.
