A gluten free cake version of classic cinnamon rolls. If you’re looking for a shortcut, this recipe is it! Still gooey, glazed and filled with brown sugar and cinnamon. I just love how the top gets a little bit of a crispy, sweet topping.

FOR THE BATTER. To make this gluten free cinnamon roll cake, begin by mixing the gluten free self raising flour, sugar, milk, eggs and vanilla together. From there, stir in the melted butter and pour into a greased 9×13 pan.

FOR THE CINNAMON SWIRLS. Then you will mix your cinnamon filling ingredients together and drop over the cake. Swirl your topping and cake mixture with a knife going up and down the length of the pan.

BAKE. Bake at 350F/180C Fan/Gas 4 for about 35 – 40 minutes. While baking, make your glaze and drizzle over the warm cake.

I recommend serving this yummy treat when it’s warm because it just melts in your mouth and tastes just like regular Cinnamon Rolls! Once its cool just reheat it in the microwave for a few seconds.

  • FOR THE CAKE BATTER:
  • 3 cups gluten free self-raising flour (i used Doves farm)
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1½ cups milk
  • ½ cup butter, melted
  • FOR THE CINNAMON FILLING:
  • ¾ cup butter, room temperature
  • 1 cup light brown sugar
  • 1 tbsp ground cinnamon
  • FOR THE GLAZE:
  • 1 cups powdered sugar
  • 3 tbsp milk
  • 1 tsp vanilla extract
Instructions
  1. FOR THE CAKE:
  2. Preheat oven to 350F/180C Fan/Gas 4.
  3. Grease a 9 x 13'' baking dish.
  4. In a large bowl, combine ingredients for cake (except melted butter).
  5. Slowly add the ½ cup melted butter.
  6. Mix just until combined.
  7. Spread this batter evenly into your baking dish.
  8. FOR THE FILLING:
  9. In a small bowl, combine all your filling ingredients: softened butter, brown sugar, and cinnamon.
  10. Stir until combined well.
  11. Drop the cinnamon filling by spoonfuls onto the cake batter.
  12. Take a butter knife and make swirly, marble-effect patterns all around the cake.
  13. Drag the knife through both the cinnamon and cake batter.
  14. Bake the cake for about 35-40 minutes, or until a knife inserted into the center comes out clean.
  15. FOR THE GLAZE:
  16. Whisk together powdered sugar, milk and vanilla extract in small bowl.
  17. Pour the glaze over the warm cake.
