When I was developing this recipe, I knew that I wanted to maintain the Mint Aero Chocolate bars without them melting. I thought long and hard about how to achieve this. I froze my Mint Aero bars before adding them to the warm condensed milk and chocolate mixture. This crucial step prevents the chocolate bubbles from melting too quickly, ensuring you get those lovely airy pieces throughout each bite of fudge. Break the Mint Aero Chocolate into pieces and place in the freezer for 30 mins.

Line a square 9'' x 9'' tin with baking/parchment paper, leaving a overhang on all 4 sides for easy removal.

Add the sweetened condensed milk, chocolate and butter to a large bowl.

Microwave ingredients for 2 mins, then remove from microwave, and stir to combine. Return bowl to microwave and microwave for an additional 1 min. Remove from microwave and stir for 1 minute. stir and continue until all is melted together.

Remove the Aero Chocolate pieces from the freezer, drop into fudge mixture and stir till just combined.

Transfer the fudge into the lined tin and place it into the fridge to set. After a minimum of 1 hour, remove and cut into individual pieces.
