If there’s one brunch dish that never goes out of style in our house, it’s avocado toast with a poached egg, but this version is a serious step up from the usual. With the perfect balance of creamy, salty, sweet, and spicy, this Gluten-Free Avocado & Halloumi Toast with Hot Honey is a little bit boujee, a little bit fiery, and absolutely loaded with flavour. It’s the kind of thing I make when I want something quick but impressive whether it’s for a solo lunch or when I’ve got friends popping in for a cuppa.

A Quick and Easy Brunch Favourite

I used Genius gluten-free tiger bread, lightly toasted for that signature crispy crust and soft middle. It holds up beautifully under the weight of the toppings and gives a gorgeous bite without falling apart. The mashed avocado is seasoned simply with salt and a squeeze of lemon juice, but if you’re feeling extra, a little garlic or chilli powder stirred in wouldn’t hurt either.

Then comes the halloumi. I’m obsessed with halloumi, always have been and when it’s pan-fried until golden and crisp, it adds such a satisfying, salty chew. Even better, it pairs beautifully with the creaminess of the avocado. To finish it all off, I give everything a pinch of chilli flakes and a drizzle of hot honey which you can make at home or buy pre-made. It brings that sticky, sweet heat that just ties everything together.

The textures and flavours are just right. It’s also really adaptable: you can add a fried egg, some rocket leaves, or even swap the halloumi for crumbled feta if you fancy. But honestly? The classic version is perfect just as it is.

Gluten-Free Avocado & Halloumi Toast with Hot Honey

  1. Toast your gluten-free bread slices until golden and crispy. Set aside.
  2. In a small bowl, mash the avocado with lemon juice and a pinch of salt until smooth but still slightly chunky.
  3. Heat a non-stick pan over medium-high heat. Add the sliced halloumi and cook for 1–2 minutes on each side until golden and crispy. You can use a touch of olive oil if your pan tends to stick.
  4. Spread the mashed avocado over the toasted bread. Lay the grilled halloumi slices on top. Sprinkle with chilli flakes to taste.
  5. Finish with a generous drizzle of hot honey. Serve immediately while warm and melty!

Notes

Hot Honey Tip: You can buy hot honey or make your own by gently warming 2 tbsp honey with ¼ tsp chilli flakes (or more if you like it hotter). Let it infuse for 5–10 minutes, then strain if preferred.

This recipe is naturally gluten free, just make sure all your ingredients (especially halloumi and bread) are labelled gluten free.

For extra texture, you could also add sliced cherry tomatoes, rocket leaves, or a poached egg on top!
