Gluten-Free White Chocolate Chip Red Velvet Muffins
These gluten-free red velvet muffins are soft, moist, and full of rich, chocolatey flavour with a hint of vanilla. Studded with creamy white chocolate chips, theyโre perfect for a sweet breakfast treat or an indulgent snack.

Preheat the oven to 180ยฐC. Line a 12 muffin tin with 12 paper liners or grease well.

In a large mixing bowl, combine all the wet ingredients โ melted butter, oil, sugar, eggs, vanilla extract, and red food colouring. Whisk until smooth.

Add the dry ingredients (gluten-free flour, cocoa powder, baking powder, baking soda, and salt) directly into the wet mixture. Pour in the buttermilk and mix everything together until just combined. Use a hand mixer for a smooth batter, but do not overmix.

Fold in most of the white chocolate chips, reserving some for the topping.
