  1. Preheat the oven to 180ยฐC. Line a 12 muffin tin with 12 paper liners or grease well.

  2. In a large mixing bowl, combine all the wet ingredients โ€“ melted butter, oil, sugar, eggs, vanilla extract, and red food colouring. Whisk until smooth.
  3. Add the dry ingredients (gluten-free flour, cocoa powder, baking powder, baking soda, and salt) directly into the wet mixture. Pour in the buttermilk and mix everything together until just combined. Use a hand mixer for a smooth batter, but do not overmix.
  4. Fold in most of the white chocolate chips, reserving some for the topping.
