There’s something about Funfetti cupcakes that instantly makes people smile. Bright, colourful and packed with rainbow sprinkles, they’re the kind of bake that feels like a celebration before you’ve even taken the first bite. Whether it's a birthday party, school celebration or just a rainy afternoon treat, these cupcakes always disappear fast.

These cupcakes have become one of my favourite recipes to make for children. They're soft, fluffy and topped with a silky cream cheese frosting that balances the sweetness perfectly. The colourful sprinkles running through the sponge make every cupcake a little surprise when you peel back the wrapper, and they always look so cheerful sitting on a party table.

One thing that makes a huge difference with this recipe is the sprinkles you use. You'll need baking-stable rainbow sprinkles, as regular sprinkles often bleed into the batter during baking, leaving you with streaks of colour instead of those lovely little pops throughout the cupcakes.
It's also really important to check that your sprinkles are gluten-free, as many brands contain wheat or aren't suitable for coeliacs. Thankfully, there are plenty of gluten-free baking sprinkles available now if you know what to look for.

To finish these cupcakes, I use a smooth cream cheese frosting. It's rich without being overly sweet and pairs beautifully with the vanilla sponge. Add a handful of extra rainbow sprinkles on top and you've got cupcakes that look every bit as good as they taste.

These gluten-free funfetti cupcakes are soft, colourful and topped with cream cheese frosting. Perfect for birthdays and kids’ parties.
Add eggs and beat with an electric mixer at medium speed for one minute. Add flour, milk, and vanilla extract, beat at medium speed for one minute. Fold in the sprinkles. Do NOT over mix.
Use baking-stable rainbow sprinkles for the best results. Regular sprinkles can bleed into the batter during baking and won't give you those colourful speckles throughout the cupcakes.
Always check that your sprinkles are gluten-free, as many brands contain wheat or may not be suitable for coeliacs.
Don't overmix the batter once the flour has been added. Mix just until everything is combined to keep the cupcakes light and fluffy.
Fill the cupcake cases around ⅔ full to allow room for them to rise without overflowing.
Make sure the cupcakes are completely cool before frosting, otherwise the cream cheese frosting will melt.
Store the finished cupcakes in an airtight container in the fridge for up to 4 days because of the cream cheese frosting.
For the best flavour and texture, remove the cupcakes from the fridge 20–30 minutes before serving.
The unfrosted cupcakes can be frozen for up to 3 months. Defrost at room temperature before decorating.
