There’s something incredibly satisfying about a grilled cheese sandwich… but when you add BBQ chicken and gooey mozzarella, it becomes next-level comfort food. This Gluten-Free BBQ Chicken Grilled Cheese Sandwich is smoky, cheesy, buttery, and golden crisp on the outside. It’s also a great way to use up leftover chicken, making it quick and budget-friendly too!

I’ve made this recipe loads of times now, especially when I’ve got leftover roast chicken or a bit of shredded meat in the fridge. You could also use rotisserie chicken or even make a batch of my Slow Cooker BBQ Pulled Chicken which works perfectly here and adds even more flavour.

The outside of the sandwich is coated in garlic butter, which crisps up beautifully in the pan. Inside, you’ve got soft shredded chicken tossed in gluten-free BBQ sauce and a generous handful of mozzarella cheese that melts like a dream. It’s salty, sweet, smoky, and cheesy, what more could you want?
I used my go-to Promise brand gluten free bread for this one. It grills up golden and holds everything in nicely without falling apart or going soggy. Honestly, I’ve said it before, but I think it’s the best gluten free bread you can get your hands on.

You can use any BBQ sauce you love, just make sure it’s gluten free. I used Bull’s-Eye BBQ Sauce, but as long as the label says it’s safe, go for your favourite. A smoky or spicy version works really well to cut through the richness of the cheese.
If you love bold flavours and cheesy sandwiches, you’ll absolutely love this one. It’s easy, quick, and perfect for lunch or dinner, especially when served with a handful of crisps or some coleslaw on the side. Grilled cheese will never be boring again!
