When I was developing this recipe, I knew that I wanted to maintain the Mint Aero Chocolate bars without them melting. I thought long and hard about how to achieve this. I knew if you combine the Aero chocolate with the melted fudge ingredients, it would melt and loose the experience of biting into the Aero chocolate. So the solution I came up with is to freeze the chocolate pieces for at least 30 minutes before we use them. It works. Yay. So the very first thing to do is break the Mint Aero Chocolate into individual pieces, pop them in a bowl and place them in the freezer.
- 160g Mint Aero chocolate
- 500g milk chocolate
- 397g sweetened condensed milk 1 tin
- 50g butter
- Break the Mint Aero Chocolate into pieces and place in the freezer for 30 mins.
- Line a square 9'' x 9'' tin with baking/parchment paper, leaving a overhang on all 4 sides for easy removal.
- Add the sweetened condensed milk, chocolate and butter to a large bowl.
- Microwave ingredients for 2 mins, then remove from microwave, and stir to combine. Return bowl to microwave and microwave for an additional 1 min. Remove from microwave and stir for 1 minute. stir and continue until all is melted together.
- Remove the Aero Chocolate pieces from the freezer, drop into fudge mixture and stir till just combined.
- Transfer the fudge into the lined tin and place it into the fridge to set. After a minimum of 1 hour, remove and cut into individual pieces.
