Gluten Free Pesto Baked Eggs

Baked eggs are cooked in a individual ramekins with cream and yummy basil pesto to make for a unique and easy breakfast.

Ingredients
  • 4 eggs
  • 3 tbsp double cream
  • 2 tbsp basil pesto
  • ½ tsp chilli Flakes
  • salt and pepper to taste
  • Gluten Free toast or bread to serve
Instructions
  1. Preheat oven to 200°C. Place two individual oven-safe bowls or ramekins on a baking sheet.
  2. Grease each one with nonstick spray.
  3. Add 2 tablespoons of double cream and 2 eggs to each bowl.
  4. Top with a little salt and pepper and 1 tablespoon of pesto.
  5. Bake in preheated oven for 12 to 15 minutes or until the eggs are done but still slightly runny.
  6. Sprinkle with some chili flakes.
  7. Serve with gluten free toast or bread.
