Gluten Free Slow Cooker Chili

Ingredients
  • 2 pounds lean ground beef
  • 3 cloves garlic, minced
  • 1 medium sweet onion, diced
  • 1 red chili, minced
  • 2½ cups/300ml beef stock
  • 1 can red kidney beans, rinsed and drained
  • 1 can black beans, rinsed and drained
  • ½ cup frozen corn
  • 2 cans diced tomatoes
  • 3 tablespoons chili powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons dried oregano
  • 1½ teaspoons ground cumin
  • salt and freshly ground black pepper, to taste
  • TO SERVE
  • Sour cream
  • Avocado
  • Tortilla chips, crushed
  • Green onions
  • Chives
  • Cheese
Instructions
  1. Place minced beef into a slow cooker. Stir in beef stock, onion, garlic chilli, kidney beans, black beans, corn, diced tomatoes, chili powder, paprika, oregano and cumin, season with salt and pepper, to taste. Cover and cook on low heat for 7-8 hours or high heat for 5-6 hours.
  2. Serve immediately, garnished with any of the following toppings - sour cream, avocado, Tortilla chips, green onions, chives, cheese
