Gluten Free Orange Pound Cake
- 3 large eggs
- ¾ cup/160g Granulated Sugar
- 1⅓ cup/160g Gluten Free Self raising flour
- ⅔ cup/150g spreadable butter
- Juice and Zest of 1 large orange
- FOR THE GLAZE
- ⅓ cup Icing Sugar
- 2tsp Orange juice
- Preheat the oven to 350°F/180°C/Gas mark 4 and grease a 1lb loaf tin.
- In a large bowl, beat the eggs and sugar until pale and fluffy.
- Sift in the flour and stir well.
- Melt the butter and pour it into the batter.
- Juice and zest the fresh orange and incorporate.
- Pour the batter into the loaf tin and bake for 40 minutes.
- Allow the cake to cool completely before glazing.
- To make your glaze mix the icing sugar and orange juice together and drizzle it over the cake.
