Gluten Free Orange Pound Cake

Ingredients
  • 3 large eggs
  • ¾ cup/160g Granulated Sugar
  • 1⅓ cup/160g Gluten Free Self raising flour
  • ⅔ cup/150g spreadable butter
  • Juice and Zest of 1 large orange
  • FOR THE GLAZE
  • ⅓ cup Icing Sugar
  • 2tsp Orange juice
Instructions
  1. Preheat the oven to 350°F/180°C/Gas mark 4 and grease a 1lb loaf tin.
  2. In a large bowl, beat the eggs and sugar until pale and fluffy.
  3. Sift in the flour and stir well.
  4. Melt the butter and pour it into the batter.
  5. Juice and zest the fresh orange and incorporate.
  6. Pour the batter into the loaf tin and bake for 40 minutes.
  7. Allow the cake to cool completely before glazing.
  8. To make your glaze mix the icing sugar and orange juice together and drizzle it over the cake.
