Gluten Free Marble Cake

Serves: 1 loaf
- 1½ cups all Gluten free self raising flour
- 3 egg whites
- 3 egg yolks
- ½ cup vegetable oil
- ¾ cup sugar
- 1½ tsp vanilla
- ⅓ cup milk
- 2 tbsp unsweetened cocoa powder
- Extra 2 tbsp sugar for chocolate batter
- Preheat oven to 350°F/160°C/Gas 4.
- Grease and line a 1lb loaf pan with parchment paper.
- Place egg whites in a medium bowl and the yolks in a large bowl.
- With an electric hand mixer on high, beat egg whites until they form stiff peaks.
- To the egg yolks add oil, sugar & vanilla. Beat on high speed for about a minute.
- With beater on low, add milk, then slowly add your sifted flour.
- Using a spatula, gently fold egg whites into the mixture.
- Place about ⅔ cup of the batter into the empty egg white bowl. Fold in cocoa powder and the extra 2 Tbsp. sugar.
- Spoon layers into the pan.
- Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
