Gluten Free Marble Cake

Ingredients
  • 1½ cups all Gluten free self raising flour
  • 3 egg whites
  • 3 egg yolks
  • ½ cup vegetable oil
  • ¾ cup sugar
  • 1½ tsp vanilla
  • ⅓ cup milk
  • 2 tbsp unsweetened cocoa powder
  • Extra 2 tbsp sugar for chocolate batter
Instructions
  1. Preheat oven to 350°F/160°C/Gas 4.
  2. Grease and line a 1lb loaf pan with parchment paper.
  3. Place egg whites in a medium bowl and the yolks in a large bowl.
  4. With an electric hand mixer on high, beat egg whites until they form stiff peaks.
  5. To the egg yolks add oil, sugar & vanilla. Beat on high speed for about a minute.
  6. With beater on low, add milk, then slowly add your sifted flour.
  7. Using a spatula, gently fold egg whites into the mixture.
  8. Place about ⅔ cup of the batter into the empty egg white bowl. Fold in cocoa powder and the extra 2 Tbsp. sugar.
  9. Spoon layers into the pan.
  10. Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
