Ingredients
  • ¾ cup/175g spreadable butter
  • ¾ cup/175ml milk
  • 1 cup/200g granulated sugar
  • 3 eggs
  • 4tsp of coffee granules dissolved in 1tbsp hot water.
  • 1¾ cups/225g gluten free self rising flour
  • 1 tsp xanthan gum
  • ½ tsp salt
Instructions
  1. Preheat oven to 325F/160C Fan/Gas 3. Grease and line your loaf tin.
  2. Dissolve the coffee in the warm water and set aside.
  3. Sieve the flour, and add the salt and xanthan gum to a separate bowl.
  4. Cream together the butter and sugar until its a pale light colour.
  5. Slowly add the eggs to the mixer.
  6. Add half the milk with half of the flour and continue adding until combined.
  7. Once combined,stir in the coffee mixture.
  8. Add your mixture to your prepared loaf pan.
  9. Bake for 45-60 minutes or until a skewer comes out clean.
