Gluten Free Coffee Loaf

- ¾ cup/175g spreadable butter
- ¾ cup/175ml milk
- 1 cup/200g granulated sugar
- 3 eggs
- 4tsp of coffee granules dissolved in 1tbsp hot water.
- 1¾ cups/225g gluten free self rising flour
- 1 tsp xanthan gum
- ½ tsp salt
- Preheat oven to 325F/160C Fan/Gas 3. Grease and line your loaf tin.
- Dissolve the coffee in the warm water and set aside.
- Sieve the flour, and add the salt and xanthan gum to a separate bowl.
- Cream together the butter and sugar until its a pale light colour.
- Slowly add the eggs to the mixer.
- Add half the milk with half of the flour and continue adding until combined.
- Once combined,stir in the coffee mixture.
- Add your mixture to your prepared loaf pan.
- Bake for 45-60 minutes or until a skewer comes out clean.
