Gluten Free Easter Themed Vanilla Cupcakes

Serves: 24 Cupcakes
Ingredients
  • ½ cup vegetable oil
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1¼ cups self-raising gluten free flour
  • ¼ tsp salt
  • 1 tsp baking powder
  • ½ cup milk
  • 2 tsp vanilla extract
  • ....................................
  • Frost with store bought frosting or use my recipe I have linked above and under this recipe.
  • Top with desiccated coconut and smarties mini eggs.
Instructions
  1. For the cupcakes: Preheat oven to 350°F/180°C/Gas 4.
  2. Line cupcake pan with paper liners.
  3. In a medium mixing bowl combine oil and sugar.
  4. Add eggs and beat with an electric mixer at medium speed for one minute. Add flour, salt, baking powder, milk, and vanilla extract, beat at medium speed for one minute.
  5. Spoon batter evenly into cupcake liners. Bake for 18-20 minutes or until the centres spring back when touched and cupcakes are very lightly browned.
  6. Let cool in the pan on a rack for five minutes. Remove cupcakes from pan onto a rack and cool completely before frosting and adding your toppings.
