Gluten free Carrot Spice Cake
- 225g/8oz gluten free self raising flour
- 2tsp Ground Cinnamon
- 1tsp Ground Ginger
- ½tsp All Spice
- 225g/8oz Light brown sugar
- 225g/8oz Carrots, grated
- 4 Eggs
- 150g/6oz Butter, melted
- Preheat oven to 180*C/350*F/Gas 4.
- Grease and line a 9inch square pan with parchment paper.
- Melt your butter now and leave to cool.
- Put the flour, spices and sugar in a mixing bowl and mix together.
- Add the carrots and mix until combined.
- Add the eggs to the flour mixture and mix well, then add the melted butter and mix until all is combined.
- Pour the mixture into the prepared tin.
- Bake for 30-40 minutes or until cooked through and golden.
- Remove from the oven and leave to cool completely.
- Cut into squares and serve.
