FLOURLESS CHOCOLATE CHIP BANANA BEAD

  • 3 medium ripe bananas
  • 2 cups gluten free oats
  • 2 large eggs
  • ¼ cup pure maple syrup
  • 1 teaspoon baking soda
  • 1 cup chocolate chips
Instructions
  1. Preheat oven to 350*F/180*C/Gas 4.
  2. Lightly grease 9x5-inch loaf pan with non-stick cooking spray and set aside.
  3. Add all ingredients to a blender (leaving out the chocolate chips), and blend until smooth and well combined. Stir in chocolate chips. Pour batter into prepared loaf pan. (Garnish the top of the batter with thinly sliced banana and more chocolate chips, if desired) Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  4. Let loaf cool completely in loaf pan.
  5. Store bread in an airtight container in the refrigerator.
