Gluten Free Double Chocolate Banana Bread

  • 1½ cup gluten free self raising flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp xanthan gum
  • ½ tsp salt
  • 3 overripe bananas
  • ½ cup oil
  • ¾ cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1¼ cup chocolate chunkss, divided
Instructions
  1. Preheat the oven to 350F/180C/Gas 4.
  2. Spray a 9x5 inch non-stick loaf pan with non-stick cooking spray.
  3. In a large bowl, mash the bananas with a fork. Add the oil, sugar, egg and vanilla and stir until combined.
  4. Add the flour, cocoa powder, baking powder, xanthan gum and salt. Mix until combined.
  5. Add 1 cup of chocolate chunks to the mixture and stir until evenly distributed.
  6. Transfer the batter into a loaf pan. Sprinkle the remaining ¼ cup of chocolate chips on top.
  7. Put the chocolate banana bread loaf pan in the oven and bake for 50 minutes.
  8. Cool completely before removing from the pan.
