Gluten Free Double Chocolate Banana Bread
- 1½ cup gluten free self raising flour
- ½ cup unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp xanthan gum
- ½ tsp salt
- 3 overripe bananas
- ½ cup oil
- ¾ cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1¼ cup chocolate chunkss, divided
- Preheat the oven to 350F/180C/Gas 4.
- Spray a 9x5 inch non-stick loaf pan with non-stick cooking spray.
- In a large bowl, mash the bananas with a fork. Add the oil, sugar, egg and vanilla and stir until combined.
- Add the flour, cocoa powder, baking powder, xanthan gum and salt. Mix until combined.
- Add 1 cup of chocolate chunks to the mixture and stir until evenly distributed.
- Transfer the batter into a loaf pan. Sprinkle the remaining ¼ cup of chocolate chips on top.
- Put the chocolate banana bread loaf pan in the oven and bake for 50 minutes.
- Cool completely before removing from the pan.
