Step 1:Use a small, sharp knife to slice the tops off of the peppers. Be careful not to touch your eyes throughout this process. To be extra careful, you could wear gloves. Slice the pepper lengthwise.
Step 2:Drag the tip of the knife down along the pepper, scraping out the seeds (leave them in if you prefer the dish to be extra spicy).
Step 3:If you want the peppers to be even milder, dip the deseeded halves into a bowl of cool water. Finely slice the peppers lengthwise.
Step 4:Chop the peppers into small, even pieces.
