Gluten free Carrot Spice Cake

  • 225g/8oz gluten free self raising flour
  • 2tsp Ground Cinnamon
  • 1tsp Ground Ginger
  • ½tsp All Spice
  • 225g/8oz Light brown sugar
  • 225g/8oz Carrots, grated
  • 4 Eggs
  • 150g/6oz Butter, melted
Instructions
  1. Preheat oven to 180*C/350*F/Gas 4.
  2. Grease and line a 9inch square pan with parchment paper.
  3. Melt your butter now and leave to cool.
  4. Put the flour, spices and sugar in a mixing bowl and mix together.
  5. Add the carrots and mix until combined.
  6. Add the eggs to the flour mixture and mix well, then add the melted butter and mix until all is combined.
  7. Pour the mixture into the prepared tin.
  8. Bake for 30-40 minutes or until cooked through and golden.
  9. Remove from the oven and leave to cool completely.
  10. Cut into squares and serve.
