You wouldn’t think that just a few ingredients can come together to make such a velvety and delicious tomato soup.

Ingredients
4 tbsp Unsalted Butter
1 Medium Onion
1 can Tomatoes
1½ cups low-sodium Chicken Stock
1 tsp Garlic Powder
1 tsp salt
Instructions
Melt butter over medium heat in a large saucepan. Add onion, stock, can of tomatoes with their juices, and the garlic and salt. Bring to a simmer. Cook uncovered, for about 40 minutes. Stir occasionally.
Blend the soup using a blender or a hand blender, being careful as the soup is hot.
Serve and Enjoy!
