Gluten Free Pesto Caprese Chicken

Ingredients
  • 2 boneless, skinless, chicken breasts
  • 2 tbsp basil pesto
  • 2 tomatoes, sliced
  • 4 oz fresh mozzarella, sliced
  • dash salt
  • dash black pepper
Instructions
  1. Preheat oven to 350F/180C/Gas 4.
  2. Lay the chicken breasts flat in a baking dish.
  3. Spread 1 tbsp of pesto evenly on each chicken breast.
  4. Top with tomato slices followed by the mozzarella cheese. (see pictures above)
  5. Bake for 30-40 minutes or until chicken is cooked through to an internal temperature of 165˚F
  6. Serve with a fresh salad.
